Ingredients
- 2 medium chicken breasts, cut into ½-inch pieces
- 1 cup broccoli florets
- 1 chopped red onion
- 1 cup grape or plum tomatoes
- 1 chopped medium zucchini
- 2 minced garlic cloves
- 1 Tbsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper (optional)
- ½ tsp red pepper flakes (optional)
- ½ tsp paprika
- 2 Tbsp olive oil
- 2–4 cups cooked rice of choice (optional)
Instructions
- Preheat oven to 450°F and line a baking sheet with tin foil.
- Place the chicken and veggies on the baking sheet. Sprinkle all the spices and garlic evenly over them and drizzle with olive oil.
- Bake for 15–20 minutes, or until veggies are charred and chicken is tender.
- Place ½ or 1 cup of cooked rice into 4 meal prep containers and divide the chicken and veggies evenly on top. Cover and store in the fridge for up to 5 days or in the freezer for up to 2 months.
